1 1/2 CUPS of instant white rice (uncooked)

1 can of black beans (rinsed)  - we only use half a can but its to your own taste

1 yellow pepper - chopped

1 can  of condensed CREAM of CHICKEN soup

1 soup can of water

1/4 CUP of chopped Cilantro  (if you dont have cilantro you can substitute with  1 tsp of coriander)

4 small boneless chicken breasts ( about 1 lb)

1/2 cup of salsa   ( you can use more if you choose)

1 cup of shredded cheese   (Cheddar or Tex Mex)

Heat oven to 400 degrees

Combine rice, beans and peppers and put into a 13 x 9 inch baking dish

Mix soup and water and cilantro and pour over rice mixture

Top with chicken and salsa

Bake for 35 minutes or until chicken is done ---- Top with cheese and bake for another 10 minutes or until cheese is melted
